Ladyfish opened May 13, 2026 at 425 Fore Street in Portland's Old Port — a seasonal seafood pop-up from Jordan and Marisa Rubin (Mr. Tuna, Crispy Gai) in the former Bar Futo space. Running May through October only, the kitchen is led by chef Christine Lau (formerly executive chef at Kimika in NYC, a James Beard Best New Restaurant semifinalist in 2022) who relocated to Portland to lead. The menu draws on Lau's Chinese, Italian, and Latin American background applied to Maine seafood: Whole Fried Fluke Francese, Lobster Frites with Cantonese influences, casino-style Little Neck Clams roasted on the half shell with Chinese sausage, plus steamed buns with uni butter, crispy noodles alle vongole, tuna carpaccio, eggplant dip, key lime hand pies, oysters, chowders, and lobster rolls.
