Dayboat Cafe opened March 16, 2026 at 17 Friendship Road in Waldoboro's downtown as a daytime neighborhood cafe and market. Co-founders — one a private-chef alum who landed in Maine in 2009 — met in Damariscotta, chose Waldoboro for its small-town fit, and built much of the space themselves: double-belt-sanding the original floors, applying polyurethane, and constructing a 22-foot lunch counter on casters from sections built by one partner's husband. Equipment came secondhand from surrounding communities, including a five-foot deli case purchased from Brunswick fishermen. The name nods to dayboat fishing tradition; the rustic interior carries a working-harbor feel.
