Belle Boulangerie opened Memorial Day weekend 2025 at 156 Water Street in Hallowell (the second-oldest building in town, built 1809). Owner Galyna Syrota — originally from Ukraine, with engineering and economics-education degrees plus Le Cordon Bleu Paris viennoiserie and boulangerie training — relocated her bakery from Sebec after running it under the same name in 2024. The grab-and-go menu features French baked goods using just four-ingredient breads (yeast, water, salt, flour) plus croissants, brioches, pain au chocolat, baguettes, babka, madeleines, cruffins, and danishes — all without preservatives. House classes include sourdough and macaron workshops. Tue–Fri 8am–2pm; Sat 9am–2pm.
