James Beard 2024 Outstanding Bakery from Barak Olins on Portland's Clark Street — French-style boulangerie with Maine-grown grains milled in-house.
Barak Olins launched ZUbakery in 2000 from a barn in Freeport, selling at the Brunswick Farmers Market for over twenty years. In November 2022 he opened a 650-square-foot West End storefront at 81 Clark Street, inspired by 1930s French boulangerie design, with an open kitchen and a five-deck electric steam-injection oven. All whole-grain flour is milled in-house from spelt, wheat, and rye grown in Aroostook County. ZUbakery won the James Beard Foundation's Outstanding Bakery award in 2024, beating out four other national finalists. The schedule rolls out throughout the day — morning pastries, baguettes, biscotti, granola, and rustic loaves coming hot from the oven as they finish.
