Panacea opened February 1, 2025 at 100 Main Street in Wiscasset, across from Red's Eats, in the former Yonder sandwich shop space. Owner Chauncey Erskine — formerly proprietor of Maine Booch in Damariscotta — built it as an ocean-inspired chowder house and soupery focused on community as much as comfort food. The menu runs grilled cheeses (Knotty Buoy with cheddar, green apple, seaweed and maple-miso spread; Spinnaker; Landlubber; lobster grilled cheese), Maine clam chowder, vegan chowder options, and rotating soup specials with locally sourced and foraged ingredients. Nautical charts, sea captain figurines, and game nights round out the room.
