Cushnoc Cantina opened January 6, 2025 at 150 Main Street in downtown Waterville, in a Colby College-owned residence hall ground floor. The 80-seat second location for Augusta's Cushnoc Brewing Co. (co-founded by Tobias Parkhurst, Chris Geerlings, Amber and Casey Hynes, James Bass) trades the original's wood-fired pizza for tacos — alongside Cushnoc's flagship beer. Two new house brews debuted with the room: the Guzman Light Lager, a clean Mexican-style lager, and the Up River IPA brewed with experimental hops. Sun–Thu 11am–9pm; Fri–Sat 11am–10pm.
