Spark Bagel opened its retail shop and cafe in January 2025 at 681 Atlantic Highway in Northport, in the former Stone Brick Oven Kitchen building. Owner Shawn Williams — Long Island raised, kitchens trained, Northport landed via Austin — had been selling at farmers markets since 2023 before going brick-and-mortar. The bagels are naturally leavened, hand-rolled, long-fermented, and honey-boiled in a bath sweetened with local Swan's Honey, using Maine-grown and -malted grains. Plain, sesame, everything, poppy, and onion classics sit alongside the runaway favorite fennel and sea salt. Fri–Sun, 8am–1pm.
